Not so surprisingly, one of my favorite things about fall is going to the apple orchards and pumpkin patches. Need proof? Matt and I went to Ditmars Orchard in Council Bluffs to take our engagement photos. Apple flavors evoke warm, cozy fall vibes for me and it’s a beautiful thing. And since I mentioned eating a healthy breakfast before heading off to work, here’s a pancake recipe with a fruity twist.
(Makes 4 servings)
How you make it:
1. Heat skillet over medium heat.
2. In large bowl, beat 1 cup pancake mix, 1 egg and 1/2 cup milk. Whisk until well blended.
3. Dip 12 thinly sliced apple rings (one at a time) into batter; place in hot pan.
4. Cook until deep golden brown on each side. Serve immediately with warm maple syrup. Dust with cinnamon (optional).
